hydrogenated oil
Processed cooking fat
Hydrogenated oil is a liquid vegetable oil that has been chemically altered by adding hydrogen atoms, making it more solid and shelf-stable.
The process creates trans fats, which raise health concerns—partially hydrogenated oils were once common in margarine, shortening, and processed foods but have been largely phased out due to their link to heart disease.
Fully hydrogenated oils contain no trans fats and remain in use.
