grease fire

Burning cooking oil

A grease fire is a fire fueled by burning cooking oil or fat, typically occurring when oil in a pan overheats past its smoke point and ignites.

Grease fires are notoriously dangerous because water makes them explosively worse—the water instantly vaporizes and spreads burning oil.

They require smothering with a lid or baking soda, never water: Never throw water on a grease fire.
