gravy base
Sauce starting point
A gravy base is a concentrated mixture—powder, paste, or liquid—used to make gravy quickly without starting from pan drippings.
It typically contains meat extracts, starch, and seasonings: Just add water to the gravy base and stir.
The term also applies to the fat and fond left in a roasting pan, which forms the foundation for homemade gravy.
