genoise

Warm-whipped sponge cake

A genoise is a light sponge cake made by beating whole eggs with sugar over gentle heat, then folding in flour and sometimes butter.

The technique originated in Genoa, Italy.

Unlike American sponge cakes that separate eggs, genoise relies on the whole-egg foam for lift, yielding a finer, drier crumb often used as a base for layered cakes and petits fours.
