clay pot rice
Rice in earthenware
Clay pot rice is a Cantonese dish of rice cooked in a clay pot over high heat, typically topped with meat, Chinese sausage, or other ingredients.
The clay retains heat and creates a prized layer of crispy, slightly charred rice at the bottom called *guo ba*.
Soy sauce is traditionally drizzled over just before serving: We ordered clay pot rice with preserved meat and bok choy.
