cheese molds

Curd shaping containers

Cheese molds are the forms or containers used to shape cheese during production, giving wheels, blocks, and wedges their characteristic shapes: The curds are pressed into cheese molds and left to drain.

Separately, cheese molds are the fungi deliberately introduced to certain cheeses—Penicillium roqueforti in blue cheese, Penicillium camemberti on Brie and Camembert rinds—that create distinctive flavors and textures.
