broadbeans
Large flat legumes
Broadbeans are large, flat legumes grown in thick pods, also called fava beans.
They have a slightly bitter, earthy flavor and starchy texture.
The beans are typically shelled before cooking, and the outer skin of each bean is often removed as well: She blanched the broadbeans and slipped off their skins.
Common in Mediterranean and Middle Eastern cuisines.
