boiling onion
Small cooking allium
A boiling onion is a small white onion, typically one to two inches in diameter, used whole in soups, stews, and braises.
The name comes from the cooking method rather than the variety—these are simply regular onions harvested young.
Their size makes them convenient for dishes where you want intact onions that cook through evenly: pearl onions and boiling onions studded the pot roast.
