Baby kale is young kale leaves harvested early, when they're smaller and more tender than mature kale.
The mild flavor and softer texture make it popular in salads where it can be eaten raw: I tossed some baby kale into the smoothie.
Like other baby greens, it's marketed as a premium salad ingredient.
