aubergines

Glossy nightshade fruits

Aubergines is the British English term for what Americans call eggplants—the large, glossy, typically purple-skinned fruit used as a vegetable in cooking.

The word comes from French and is standard throughout the UK, Australia, and much of the English-speaking world outside North America.

Slice the aubergines and grill them with olive oil.

The singular aubergine also names the dark purple color of the vegetable's skin.
