apple filling
Pastry's fruity center
Apple filling is a cooked mixture of sliced or chopped apples, sugar, and spices—typically cinnamon—used inside pies, turnovers, strudels, and similar pastries.
Commercial versions come canned or jarred: I used store-bought apple filling to save time.
The filling may be thickened with flour or cornstarch to prevent a soggy crust.
