tartrates

Grape acid compounds

Tartrates are salts or esters of tartaric acid, an organic compound found naturally in grapes and other fruits.

In winemaking, tartrates appear as harmless crystalline deposits in bottles or on corks—sometimes called "wine diamonds." Cream of tartar, used in baking, is potassium bitartrate, a tartrate that stabilizes egg whites and prevents sugar crystallization.
