Taco rice is an Okinawan dish combining seasoned ground beef, lettuce, tomatoes, and cheese served over white rice—essentially taco filling without the shell.
The dish emerged near American military bases in Okinawa and became a regional specialty: We grabbed taco rice from a food truck outside the base.
