smoking meat
Low-heat wood cooking
Smoking meat is cooking or preserving meat through prolonged exposure to wood smoke at low temperatures.
The process imparts distinctive flavor while the slow heat tenderizes tough cuts: He spent twelve hours smoking a brisket.
Cold smoking preserves without fully cooking; hot smoking does both.
The technique predates refrigeration but persists for its flavor.
