sharpening steel

Knife edge maintainer

A sharpening steel is a rod-shaped tool used to maintain knife edges between sharpenings.

Despite the name, it doesn't actually sharpen—it realigns the microscopic edge of a blade that bends with use.

Typically made of steel, ceramic, or diamond-coated metal, it's a standard fixture in kitchen knife blocks: He ran the blade along the sharpening steel a few times before carving.
