salsify
Edible taproot plant
Salsify is a root vegetable with a long, tapered shape resembling a parsnip.
The white-fleshed variety is sometimes called oyster plant for its mild, oyster-like flavor when cooked.
Black salsify (scorzonera) has dark skin and similar culinary uses.
The roots are typically boiled, roasted, or added to soups: salsify gratin, braised salsify with butter.
