portabellas

Big brown caps

Portabellas are large, mature cremini mushrooms with broad, flat caps and a meaty texture.

The caps can reach several inches across, making them popular as vegetarian burger substitutes or stuffed with fillings.

Also spelled portobello, portabella, or portabello—the spelling varies because the name was a marketing invention.

We grilled portabellas for the vegetarians.
