popovers

Eggy air pockets

Popovers are light, hollow pastries made from an egg-rich batter that puffs dramatically when baked.

The same batter baked in a hot pan with beef drippings becomes Yorkshire pudding.

The name comes from the way the batter "pops over" the rim of the baking tin.

She served warm popovers with butter and jam.
