nopalitos

Prickly pear strips

Nopalitos are the tender young pads of the prickly pear cactus, prepared as a vegetable in Mexican cuisine.

The spines are removed and the pads sliced into strips or diced, then typically grilled, sautéed, or pickled.

They have a slightly tart, green-bean-like flavor and mucilaginous texture: nopalitos con huevos, a jar of pickled nopalitos.
