hot pots

Tabletop communal cooking

Hot pots refers to a style of communal dining where a pot of simmering broth is placed at the center of the table and diners cook their own ingredients—thinly sliced meats, vegetables, noodles, dumplings—by dipping them into the bubbling liquid.

The tradition is especially associated with Chinese, Japanese, and Korean cuisines, though variations exist throughout Asia.

We ordered the spicy Sichuan hot pot with lamb and mushrooms.

The term can also refer to the cooking vessels themselves or, in British usage, a casserole dish baked with sliced potatoes on top.
