giblet gravy
Innards-based topping
Giblet gravy is gravy made from the giblets—heart, liver, gizzard, and neck—of poultry, typically turkey or chicken.
The giblets are simmered to make stock, then chopped and added to pan drippings thickened with flour.
It's a traditional accompaniment to roast turkey at Thanksgiving: Pass the giblet gravy, please.
