flash freeze
Rapid cold preservation
Flash freeze means to freeze something very rapidly, typically using extremely low temperatures.
The speed prevents large ice crystals from forming, preserving texture and quality in foods: Flash-frozen fish is often fresher than "fresh" fish that spent days on ice.
The term also describes sudden drops in air temperature: A flash freeze turned wet roads into skating rinks.
