clabbering

Becoming thick, lumpy

Clabbering is the process of milk thickening and souring naturally, forming soft curds without added rennet or starter cultures.

Raw milk left at room temperature will clabber on its own as bacteria convert lactose to lactic acid: She left the milk on the counter, clabbering overnight for biscuits.

Clabbered milk was once a common ingredient in Southern and Appalachian cooking before refrigeration became widespread.
