chicken skin

Fryer's outer layer

Chicken skin is the outer layer of a chicken, prized when roasted crispy or used to add richness to dishes.

The term also describes the bumpy texture human skin gets from cold or strong emotion—what's more commonly called goosebumps: I got chicken skin when she hit that high note.

This usage is especially common in Hawaiian English.
