cassia

Cheaper cinnamon substitute

Cassia is a spice from the bark of an Asian tree, similar to cinnamon but stronger and less refined.

Most ground cinnamon sold in the United States is actually cassia.

The word also names various flowering plants in the legume family, some used medicinally as laxatives.

The recipe calls for cassia rather than true cinnamon.
