busser

Clears dirty dishes

A busser is a restaurant worker who clears tables, refills water glasses, and assists servers—the entry-level position in dining room hierarchy.

The term comes from the bus tubs used to collect dirty dishes: The busser swooped in before we'd even stood up.

Also called a busboy, though busser avoids the gendered term.
