Small tart fruit
Key limes are small, round citrus fruits with thin, yellowish-green skin and highly aromatic juice.
More tart and floral than common Persian limes, they're prized for Key lime pie, the Florida dessert that made them famous.
The trees are thornier and more cold-sensitive than other lime varieties, so most Key limes now come from Mexico and Central America rather than the Florida Keys.
