Holsteins are the large black-and-white dairy cattle that dominate commercial milk production worldwide.
The breed originated in the Netherlands and northern Germany, prized for exceptionally high milk yields.
Holstein is sometimes used loosely for any dairy cow: a field of Holsteins grazing by the highway.
