Crab avocado maki
California rolls are a type of sushi made with rice on the outside, wrapped around nori seaweed, crab (often imitation), avocado, and cucumber.
Invented in North America rather than Japan, they became a gateway sushi for Western eaters unfamiliar with raw fish: I started with California rolls before trying sashimi.
