water bath canning
Boiling jar preservation
Water bath canning is a food preservation method where filled jars are submerged in boiling water for a specified time.
The heat kills microorganisms and creates a vacuum seal as jars cool.
This technique works safely only for high-acid foods—fruits, pickles, jams, tomatoes with added acid: She learned water bath canning from her grandmother's Ball Blue Book.
Low-acid foods like vegetables and meats require pressure canning.
