stone-ground flour
Traditional mill product
Stone-ground flour is flour produced by grinding grain between two millstones rather than with modern steel rollers.
The slower process generates less heat, preserving more of the grain's natural oils and nutrients.
Stone-ground flour tends to be coarser and more flavorful than commercially milled flour: I prefer stone-ground flour for rustic breads.
