spring house
Stream-fed cold storage
A spring house is a small building constructed over a natural spring or stream, traditionally used to keep food cool before refrigeration.
The constant flow of cold water maintained temperatures low enough to preserve milk, butter, eggs, and other perishables.
Spring houses were common features on American and European farms from colonial times through the early twentieth century.
The old spring house still stands behind the farmhouse, though no one uses it anymore.
