shallow-fried
Cooked in little oil
Shallow-fried describes food cooked in a small amount of hot oil or fat—enough to cover the bottom of the pan and partway up the food, but not submerge it.
The technique sits between sautéing (very little fat) and deep-frying (full submersion): shallow-fried pork chops, shallow-fried fish fillets.
The food typically gets flipped partway through cooking.
