fine chop
Small uniform pieces
Fine chop is a cooking technique that produces very small, uniform pieces—smaller than a regular chop but not as tiny as a mince.
The goal is pieces roughly an eighth of an inch, small enough to distribute evenly through a dish but still visible: Give the shallots a fine chop before adding them to the vinaigrette.
