fine dice
Small uniform pieces
Fine dice is a culinary term for cutting ingredients into very small, uniform cubes—typically about 1/8 inch on each side.
It's one step smaller than a regular dice and one step larger than a mince.
The uniformity ensures even cooking and attractive presentation: Fine dice the onions before adding them to the mirepoix.
