reseasoning

Adding spices again

Reseasoning is the process of restoring or renewing the seasoning on cookware, especially cast iron.

Seasoning—the protective layer of polymerized oil that makes pans nonstick—can degrade through heavy use, improper cleaning, or rust.

To reseason, you strip the old coating and build up new layers of oil through repeated heating: My grandmother's skillet needed reseasoning after years of neglect.
