Raw almonds are almonds that haven't been roasted, salted, or otherwise processed beyond removal from their shells.
The term distinguishes them from roasted or flavored varieties: I prefer raw almonds for baking.
In the United States, most "raw" almonds sold commercially have actually been pasteurized, though they retain the designation.
