Pooping one's pants is losing control of one's bowels, defecating in one's underwear rather than a toilet.
The phrase applies literally to accidents from illness, fear, or incontinence, but more often appears as hyperbole for extreme fear or shock: I almost pooped my pants when she jumped out at me.
