underbeating
Not mixing enough
Underbeating is mixing or whipping something less than required—the opposite of overbeating.
In baking, underbeating egg whites leaves them too soft to hold peaks; underbeating batter may leave lumps: The cake was dense because I underbeat the eggs.
The term appears mainly in cooking contexts where proper aeration matters.
