noble rot

Grape-shriveling sweet fungus

Noble rot is a fungal infection of wine grapes that, under the right conditions, concentrates sugars and flavors rather than spoiling the fruit.

The fungus *Botrytis cinerea* dehydrates the grapes while adding honeyed, complex notes prized in dessert wines like Sauternes and Tokaji.

The same fungus in wet conditions causes destructive gray rot—the difference is timing and weather.
