jellification

Turning to gel

Jellification is the process of becoming jelly-like in consistency—soft, wobbly, and semi-solid.

The term appears in cooking contexts when liquids thicken with gelatin or pectin, and figuratively for things losing their firmness: My legs underwent complete jellification after the marathon.

Less common than the near-synonym gelation.
