ice wines
Cold-harvested sweet wines
Ice wine is wine made from grapes that have frozen on the vine before harvest.
The freezing concentrates sugars and acids, producing an intensely sweet dessert wine.
The grapes must be picked and pressed while still frozen, typically in predawn winter hours.
Germany and Canada are major producers: a glass of Canadian ice wine with dessert.
Also spelled as one word: icewine.
