A grill pan is a heavy pan with raised ridges across the cooking surface, designed for stovetop use.
The ridges create char marks and allow fat to drain away from food, mimicking the effect of an outdoor grill: I seared the steaks in a cast-iron grill pan.
Most are square or rectangular to maximize cooking area.
