chinoise

French for Chinese

A chinoise is a cone-shaped fine-mesh strainer used in cooking to produce smooth sauces, soups, and purées.

The conical shape allows liquid to drain through while the mesh catches seeds, fibers, and lumps.

Named for its resemblance to a traditional Chinese hat: Strain the stock through a chinoise before reducing.
