century eggs
Alkaline-cured eggs
Century eggs are a Chinese delicacy made by preserving duck, chicken, or quail eggs in a mixture of clay, ash, salt, and lime for weeks or months.
The process transforms the egg: the white becomes a dark, translucent jelly while the yolk turns creamy and greenish-gray, developing a pungent, sulfurous flavor.
Despite the name, they're cured for weeks, not years.
Also called thousand-year eggs or preserved eggs.
