celery root
Bulbous aromatic tuber
Celery root is the bulbous, knobby root of a celery variety cultivated specifically for its underground portion rather than its stalks.
Also called celeriac, it has a mild celery flavor and dense, starchy texture.
It's typically peeled and used in soups, purees, or sliced raw in salads: celery root remoulade.
