bromate

Oxidizing flour additive

Bromate is a chemical compound containing bromine and oxygen, most commonly potassium bromate.

It was once widely used as a flour additive to strengthen dough and improve bread texture, but has been banned in many countries due to concerns about carcinogenicity.

The bread was made without bromates.

As a verb, to bromate is to treat with bromic acid or a bromate compound.
