blind baking
Crust without filling
Blind baking is a technique in pastry making where a pie or tart crust is baked without its filling.
The empty shell is typically weighted down with pie weights, dried beans, or rice to prevent the bottom from puffing up and the sides from slumping.
This method is used when the filling requires no cooking or less cooking time than the crust, as with custard pies or fresh fruit tarts.
Blind bake the crust for ten minutes before adding the filling.
