beef tallow
Rendered cow grease
Beef tallow is rendered fat from cattle, produced by melting and straining beef fat until it becomes a shelf-stable solid.
Traditionally used for cooking, frying, and making soap and candles, it fell out of favor when vegetable oils dominated but has seen renewed interest: McDonald's used to fry in beef tallow.
The term distinguishes it from other tallows like mutton tallow.
