almond cream
Marzipan's softer cousin
Almond cream is a rich, sweet paste made from ground almonds, butter, sugar, and eggs, used as a filling in pastries and tarts.
Also called frangipane, it's the classic filling in a Bakewell tart or galette des rois.
The term also applies to almond-flavored dairy or nondairy creams used in coffee or desserts.
